"Go Break An Egg"
Mum's Jammy Biscuits
Ingredients:
Preheat the oven at 180 degrees Celsius. Mix the butter, sugar, egg yolks and flour.
Separately, beat the egg whites.
Make little balls from the dough, dip them in the egg whites,make a tiny hole in the middle, put jam in and cover the jam with cinnamon and sesame seeds.
Bake for about 30 minutes.

Ingredients:
- 250 gr. unsalted butter ;
- 150 gr. granulated sugar;
- 300 gr. plain flour;
- 2 eggs - separate the yolks from the whites;
- 3,4 tablespoons jam ( any jam, a hard one is preferable);
- 1 teaspoon cinnamon;
- 1 teaspoon sesame seeds.
Preheat the oven at 180 degrees Celsius. Mix the butter, sugar, egg yolks and flour.
Separately, beat the egg whites.

Ginger Bread
Ingredients:
Preheat the oven at 180 degrees.
You mix in a big bowl the butter,the cinnamon, the ginger, the bicarbonate of soda and the flour, until resembles bread crumbs. At the end we add the brown sugar. Separately, beat the egg with the golden syrup and add it in the other bowl with all the ingredients. Make a dough. Wrap it in cling film and chill in the fridge for about 20 minutes.
Make the biscuits using any biscuits cutters you have and bake for about 10-15 minutes.
Icing :
Beat the egg white until it holds and incorporate the icing sugar bit by bit. You should have a glossy icing to decorate the biscuits.

- 350 gr. plain flour;
- 1 teaspoon bicarbonate of soda;
- 1 teaspoon cinnamon;
- 2 teaspoons of ground ginger;
- 1 egg;
- 4 tablespoons golden syrup;
- 175 gr brown sugar;
- 125 gr unsalted butter.
Preheat the oven at 180 degrees.

Orange Pound Cake
Ingredients:
Sponge:
- 250 gr unsalted butter
- 1 1/2 cups caster sugar
- 3 eggs
- 1 tablespoon vanilla essence
- 1 tablespoon orange zest
- 1/2 fresh orange juice
- 1 1/2 cup plain flour
- 1 teaspoon baking powder
Preheat the oven at 180 degrees Celsius. I used a loaf tin, buttered and covered with baking paper. Mix the butter with the sugar until is nice and fluffy, add the eggs, the orange zest, vanilla essence and mix in some more. Add after, the flour with the orange juice and baking powder. You can use the mixer/food processor for all this. Bake for about 55 minutes. Let it cool down completely.
Icing:
- 1 cup icing sugar, sifted
- 3 tablespoons fresh orange juice
- 1 tablespoon orange zest
Mix them all up and add it on the cooled down cake.
Enjoy.

Raspberry & White Chocolate Cheesecake
Put the oven on 180 degrees Celsius.
Butter a 20 cm loose base tin and add baking paper all around it.
Base:
Mix them all up. Put it in the tin and push down with the back of a spoon to level it up, Put it in the fridge.
Filling:
Mix them all up and add them to the cake, on top of the biscuits base and over it with cling film. Leave it in the fridge over night.
Decorate with fruits and serve cold.
Enjoy
Put the oven on 180 degrees Celsius.
Butter a 20 cm loose base tin and add baking paper all around it.
Base:
- 60 grams melted butter
- 150 grams digestive biscuits
- 1 tablespoon Demerara sugar
Mix them all up. Put it in the tin and push down with the back of a spoon to level it up, Put it in the fridge.
Filling:
- 150 grams mascarpone cheese
- 300 grams double cream
- 1 teaspoon vanilla essence
- 200 grams melted white chocolate
Mix them all up and add them to the cake, on top of the biscuits base and over it with cling film. Leave it in the fridge over night.
Decorate with fruits and serve cold.

Brownies
375 grams granulated sugar
275 grams unsalted butter
4 eggs
75 grams cacao
100 grams self-raising flour
100 grams plain chocolate/ chocolate chips
You mix everything together in a bowl and bake for about 45 minutes at about 180 degrees Celsius.

Swiss Roll
Sponge :
- 4 eggs
- 100 grams granulated sugar
- 100 grams self-raising flour
- 1 teaspoon vanilla
-1 tablespoon boiling water ( This will prevent the Swiss roll from cracking when you roll it) .
Pre heat the oven at 160 degrees.
Mix all the ingredients and bake for 30 min. Take it out and let it cool down.
Filling:
-125 ml double cream
-50 grams icing sugar
- 250 grams mascarpone cheese
-1 teaspoon vanilla essence
Mix them all up.
Spread the mixture on the sponge and roll it. Sprinkle icing sugar on top. You can also use any fruits of your choice for this cake.

Apple Turnover
150 grams brown sugar
6 apples
4 eggs
4 tablespoons sugar
4 tablespoon self-raising flour
1 teaspoon baking powder
2 teaspoons vanilla essence
1 teaspoon cinnamon
Start by burning the brown sugar in an oven proof pan ( let it melt and spread it as high up on the pan as you can, by tipping it sideways).
Cut the apples in slices, and arrange them on top of the caramel, after it has cool down.
Make the sponge, add it on top of the apples and bake at 280 degrees for about 45 minutes.
You can serve it with custard, clotted cream, double cream, vanilla ice cream.

100 grams. mozzarella cheese
2 tablespoon milk
25 grams. butter
A pinch of salt, a pinch of pepper, a sprinkling parsley
You make a mash with the potatoes, salt, butter and milk. You butter a oven proof pot and add the mash. Make holes (egg nests) for the eggs. Add the eggs, pepper, parsley and cheese.
Bake for about 40 minutes at 180 degrees.
