Chicken & Leek pie

This is one of my favourites and I cook it quite often. It is so easy to make, very quick and delicious. I use lots of different veggies every time but this recipe is my best combo! If you love a good pie, you have to try this one! 
Serves 4. Preparation time: 40 minutes. Cooking time: 35 minutes. 

INGREDIENTS:


- a shop bought puff pastry
- 150 ml double cream
- 2 leeks
- 1 red pepper
- 200 grams white mushrooms
- 300 grams chicken thighs
- salt, pepper
- 1 egg to brush the pastry
- a knob of butter to brush the baking dish
- fresh parsley (optional)


METHOD:

Cook the chicken with the leeks, mushrooms, and pepper. Add the salt, pepper and cream and let it simmer gently until it starts to thicken up. Add the parsley at the end.
In the meantime, brush your baking dish with butter and preheat the oven at 180 degrees Celsius.
Once the filling is done, pour it to your baking dish. Roll out the pastry and tuck it in at the edges. Using a sharp knife make a hole in the middle to let the pie breathe. Score the pie using the knife with diagonal lines. Beat the egg and brush the pastry gently. Bake for 30 - 40 minutes until is nice and golden.

I’ve never had an english pie, I think it’s time to try it, sounds really easy to make and tasty 😍
