Crème Brulée Pie

My favourite dessert is Crème Brulée. Of course I love it as a pie too. This one is one of my little inventions, I just added my Crème Brulée on top of a puff pastry sheet and made a pie. So easy to make and equally as delicious. 
Serves 8. Preparation time: 20 minutes. Cooking time : 100 minutes.

INGREDIENTS:


- one shop bought pie crust
- vanilla essence
- 6 egg whites
- 400 ml cream 
- pinch of salt
- 130 grams brown sugar
- brown sugar for the burnt sugar crust

METHOD: 

Keep the pie crust cold until is time for the bake. Place the pie crust in your pie dish, use a fork to pierce it, cover with baking paper and beans and blind bake at 180 Celsius for 20 minutes.  
In the meantime, place the cream, sugar, vanilla and salt in a pot. Let it simmer gently. Once boiled, let it cool down for about 20 minutes. Whisk the egg whites with the cream and add to the prebaked crust. Return to the oven for an extra 40 - 50 minutes until it looks golden but still has a slight wobble in the middle. Once baked, sprinkle more fine sugar/brown sugar on top of the pie and burnt it using a torch to create the sugar crust. 
Enjoy it with cream or on its own.
